TAKANOME Hiire undergoes a single pasteurization process after bottling the raw sake. The pasteurization is conducted using water heated to 63-65 degrees Celsius to sterilize the contents, which is then cooled down to about 18 degrees using well water before being refrigerated to refine the flavor.
In maintaining TAKANOME's hallmark "fruity aroma and flavor" and "delicate texture," rapid cooling is essential during pasteurization.
The development background stems from our challenge to explore the ultimate pairings with cuisines worldwide.
TAKANOME, known for its extremely fruity taste, has gained attention from top restaurants globally and has been served in leading restaurants and events in Hong Kong, Singapore, the USA, and Europe since 2022. The ”Hiire" process enhances the richness of the rice, resulting in a more flavorful sake that pairs well with various dishes, both Japanese and Western, aiming for further global expansion.
The label design incorporates Japanese calligraphy, reflecting the aesthetics born from Japanese culture. The design embodies our mission to contribute to the development of Japanese culture through sake.
