Hakuin Masamune Kimoto Junmai is a robust, traditionally crafted sake that showcases depth, warmth, and layered umami. The aroma is gently expressive, offering notes of steamed rice, lactic tones from the kimoto method, dried grain, and a touch of earthiness. On the palate it is medium-to-full bodied, with a rounded mouthfeel and savory core, balanced by lively acidity that keeps the sake structured and food-friendly. Subtle hints of nuts, cereal, and faint spice emerge as it opens, leading to a dry, clean, and lingering finish that feels comforting rather than heavy.

Ideal serving temperature:
Best enjoyed at room temperature to warm (常温〜ぬる燗 / 約20–45 °C). Warming the sake softens the acidity and amplifies sweetness and umami, making it especially expressive with grilled, simmered, or fermented dishes.
