NEXT 5 is release its new series NEXT 5 Colors 2022 after more than 2 years.
A different take from their previous series of co-brewing sake, NEXT 5 Colors 2022 will release 5 unique sake, each brewed by a member of the NEXT 5 project. There is only one common characteristic in this year project: sake rice 改良信交 polished to 50%. The choice of yeast and other brewing techniques are all left to the creativity of each brewery.
NEXT 5 Colors 2022 will be released sequentially for 5 months starting this month, with a limited edition of 300 bottles each installment. Bottle is designed by acclaimed Japanese architecture Mr Tsuyoshi Tane. The first release is Harukasumi, then Aramasa (Sep), Yukinobijin (Oct), Yamamoto (Nov) and Ippakusuisei (Dec).
This is the Yamamoto NEXT5 - using Yeast No 12 which is the signature yeast for their flagship Yamamoto Pure Black
