This sake is carefully polished to 35% using sake brewing rice "Yui no Kaori" that Iwate Prefecture is proud of. Yui no Kaori was originally made on the assumption that it will be used in Daiginjo-class sake, and is a special rice suitable for sake brewing that has little miscellaneous taste and tends to produce beautiful sake quality. If you do, it will be difficult to get the characteristics of sake, but Akabu brings out the characteristics of Yui's incense while firmly showing its individuality.
