In Akabu, most sake is made using rice suitable for sake brewing from local Iwate prefecture. "Ginginga" is a rice that is soft, gentle, yet quiet, and powerfully talks about umami. Junmai Daiginjo Sake of "Ginginga" has a slightly sweet scent that floats softly and elegantly after opening. The mouthfeel is soft and has a refined taste.
