Kazuki Usui is the 11th generation of his family’s sake company, Senkin. When he was 20 years old, he heard of the first Japanese sommelier, and he promptly quit business school to study wine. With the knowledge of beverages he gained, he came to realize that his family’s sake was far from adequate; the quality had slid over the decades in an effort to keep costs down and the business afloat. So when he proposed a new direction, the family was eager to listen, and they began focusing on a French-style estate model. In fact, their sakes are known for their higher acidity levels, closer to those that of western wines than many of their contemporaries.
Their motto is “Yokei na koto shinai,” meaning do nothing unnecessary. This philosophy guides how the rice is farmed and the brewing is undertaken. The hand-cultivated rice fields are all within a 5 minute drive of the brewery. The rice is milled at the brewery. Fermentation is achieved via wild yeasts from the air. The same water that irrigates the rice is used for brewing. True terroir sake.
Clean perfumed notes of tropical fruits, such as banana, with some peach and pear. Lighter in flavor and texture than Muku, but with a presence, density, elegance and balance that only top grade sake can provide.
Kame No O is one of the few pure strains of Sakamai left in Japan; most varietals are crossbreeds, and this rarity fell out of use with the rise of Gohyakumangoku due to it's difficulty to farm. In the autumn, the scenery of rice growing in golden fields is bursting with energy. Kame No O displays serene yet wild features, and a truly unique savory aftertaste. The sake is elegant and aromatic with a dense peach-like character, yet a silky mouthfeel with refreshing brightness exhibiting the rice's depth and complexity.
