Noguchi Naohiko (#農口尚彥) is one of the famous ‘Four Great Nototoji’ (#能登杜氏四天王). He has 70 years experience in sake making and had served as Toji since 1961 at few breweries. At the end of 2017 and age of 84, he setup ‘Noguchi Naohiko Sake Institute’ as his last mission of his Toji career with other 7 young passionate sake makers.
Using 100% sake-brewing rice from the rice paddies just next to Noguchi Naohiko Sake Institute. The rice is cultivated in the perfect climate with pure water from Ishikawa Prefecture. The genshu has a hint of Japanese flowers on the nose. Great served chilled alongside vegetables, fish or Western and Chinese food with mild flavours.
